อาร์ติโชค (Artichoke) เป็นชื่อเรียกพืชชนิดหนึ่ง ชาวจีนเรียก หยางเจียง (洋姜) ประเทศไทยตั้งชื่อว่า แก่นตะวัน เป็นพืชล้มลุกอายุยืนหลายปีสายพันธุ์เดียวกับทานตะวัน ) เรียกอีกชื่อว่า กุ่ยจื่อเจียง (鬼子姜) ส่วนที่นำมาบริโภคนั้นคือ หัว ไม่นิยมกินสดเพราะรสชาติไม่อร่อยลิ้น จากการวิเคราะห์สารประกอบที่มีอยู่ในหัวของมันนั้นประกอบไปด้วย น้ำ 79.8%, คาร์โบไฮเดรต 16.6%, โปรตีน 1.0%, เยื่อใย 16.6%, เถ้า 2.8% และไวตามินจำนวนหนึ่ง คาร์โบไฮเดรตที่มีอยู่ทั้งหมดนั้นอยู่ในรูปของ อินนูลิน(inulin) 78 % ในหัวของอาร์ติโชคนั้นมีกรดอมิโนที่จำเป็นต่อร่างกาย 0.09%, threonine 0.8%, isoleucine 0.09%, methionine 0.09%, 0.24%, histidine 0.06%, arginine 0.12%, phenylalanine O.13%.
